To make these tasty nachos, mix a chopped onion, the corn kernels from two ears of corn, a 15-oz can of black beans, red enchilada sauce, and two cups of pepper-Jack cheese in a bowl. 

Prepare four 12-inch squares of foil. Place around two ounces of tortilla chips and a quarter of the black bean mixture on top, plus a sprinkling of extra pepper-Jack cheese in the middle of a piece of foil. Fold and seal the edges to create a foil packet. Repeat this with the remaining chips, bean mixture, and cheese. 

Grill the packets over a medium heat until the cheese is melted, which should be around five minutes. Transfer the packets to camping plates and open with care, and then add cilantro and lime wedges as desired. 

8. Bacon Grilled Potatoes

First, you’ll need to scrub and slice around 1.5 lbs of potatoes. Then, place two large pieces of foil layered up for extra strength on a large skillet and spray well with non-stick oil.  

Mix the sliced potatoes with a little ranch dressing and layer them up on the foil. Top the potatoes with four slices of cooked and crumbled bacon, a quarter of a cup of shredded cheddar cheese, parsley, salt, and pepper. 

Put the grill to a medium heat and grill the potato mix for around 15 minutes. Halfway through you’ll need to turn the potatoes over to ensure they’re cooked on both sides. Once they’re done, add more ranch dressing and heat for a few minutes more before serving. 

9. Campfire Pizza

Camping recipes can often surprise you by how inventive and original they are. Take this campfire pizza for example – who would have thought you could enjoy homemade pizza cooked over a campfire? And sure, you won’t be able to Netflix and chill while you eat, but this kind of al fresco dining is hard to beat!

First, you’ll need to make the pizza dough. In a large bowl, mix a package of rapid-rise instant yeast with a cup of lukewarm water and stir for one minute. Add a tablespoon of extra-virgin olive oil and two and a half cups of whole wheat flour. Mix together until you start to form a ball of dough.  

Knead the dough and add more flour if the dough mixture is too sticky. Cover the bowl with a cloth or towel and leave it to sit in a warm place. After at least 15 minutes, divide the dough in half to make two balls and leave one ball in the bowl. 

Place a skillet on top of a campfire grate and add olive oil for cooking. Place one of the dough balls in the pan and push the dough towards the edges with your fingers to cover the base of the skillet. Cook the dough on the campfire for around three to five minutes, until the dough starts to firm up.  

Remove the skillet and flip the pizza base over. Away from the heat, top the pizza base with tomato sauce, mozzarella, and your choice of veggies or meat. These can include sliced onion, sliced garlic, black olives, fresh basil leaves, pepperoni, ham, bacon, and mushroom.

Once all the toppings are on, place the skillet back on the grate and cook until the cheese has melted. Then, take the first pizza off the skillet and repeat the same steps with the second ball of dough.
